  • Heat oil in large nonstick skillet on medium heat. Add potatoes, yellow onions, red peppers and black pepper; stir. Cover; cook 12 to 15 min. or until vegetables are tender, stirring occasionally.
  • Add corn, barbecue sauce and salsa; mix well. Cook, uncovered, 2 to 3 min. or until heated through, stirring frequently. Use back of spoon to press 4 indentations evenly into top of potato mixture; slip a cracked egg into each indentation.
  • Sprinkle with cheese and green onions; cover. Cook 3 to 5 min. or until egg whites are set and yolks are cooked to desired doneness.


Prepare using Diana Sauce Gourmet Spicy BBQ Sauce and/or Cracker Barrel Shredded Tex Mex or Habanero Cheese.

Special Extra

Garnish with 1/4 cup sour cream before serving.
