  • Heat oil in medium skillet on medium-high heat. Add mushrooms; cook 4 min. or until tender, stirring occasionally. Beat eggs, Miracle Whip and milk in large bowl with whisk until well blended. Stir in stuffing mix.
  • Spoon into 9-inch square baking dish sprayed with cooking spray; top with mushrooms, tomatoes and onions. Cover with plastic wrap; freeze until solid. Wrap in foil. Freeze up to 3 months.
  • Heat oven to 350ºF. Remove foil and plastic wrap. Discard plastic wrap. Re-cover dish with foil. Bake 1 hour. Remove foil; top with cheese. Bake, uncovered, 15 min. or until centre is set.

To Serve Tonight

Heat oven to 350ºF. Bake casserole (uncovered) 50 min. or until centre is set, topping with cheese the last 15 min. Let stand 10 min. before serving.


For a shorter cooking time, thaw overnight in the refrigerator, then bake 40 min. or until centre is set.

    I make this recipe whenever eggs are on sale. Quick, easy, and super tasty. However, I only put in half the package of the Stove Top Stuffing Mix. Also, for a little extra punch, I put Mexican mix shredded cheese.
