Use a food processor or immersion blender to puree the cooked cauliflower and dressing.
Refrigerate any leftovers. Reheat in microwaveable container just before serving.

This was so easy to make. My husband thought he was eating mashed potatoes. I think next time I will mix the green onions in but won't change anything else.

I enjoyed this as an alternative to mashed potatoes - it's always good to find something that reduces carb intake! It tastes like cauliflower but definitely looks like mashed potatoes! I am not a fan of ranch dressing, so instead I put in about a tablespoon of unsalted butter, 1/4 c. of sour cream, and some salt and pepper (but still garnished with green onion). It was very good and I will definitely make this again.
