This was so easy to make. My husband thought he was eating mashed potatoes. I think next time I will mix the green onions in but won't change anything else. We both enjoyed this very much. A keeper.

I enjoyed this as an alternative to mashed potatoes - it's always good to find something that reduces carb intake! It tastes like cauliflower but definitely looks like mashed potatoes! I am not a fan of ranch dressing, so instead I put in about a tablespoon of unsalted butter, 1/4 c. of sour cream, and some salt and pepper (but still garnished with green onion). It was very good and I will definitely make this again.
