  • Heat oven to 375ºF.
  • Mix first 4 ingredients in large bowl; stir in cheese.
  • Whisk remaining ingredients until blended. Add to cornmeal mixture; stir just until moistened. Spread onto bottom of 9-inch square pan sprayed with cooking spray.
  • Bake 15 to 20 min. or until toothpick inserted in centre comes out clean. Cool 10 min. Run knife around edges to loosen bread from sides of pan; invert onto cutting board. Remove pan. Turn cornbread over; cut into squares. Serve warm.

Special Extra

Chop 1/2 jalapeno pepper; stir into batter before spreading onto bottom of pan.

Variation

For a round loaf, bake cornbread in 9-inch springform pan sprayed with cooking spray, increasing the baking time to 20 to 25 min. or until toothpick inserted in centre comes out clean.
