  • Preheat oven to 400°F. Combine flour, cornmeal and baking powder in large bowl. Add corn, cheese, milk, salsa, onions, egg and oil. Mix just until dry ingredients are moistened.
  • Spoon batter evenly into 12 medium paper-lined or greased muffin cups.
  • Bake 20 to 22 min. or until golden brown. Remove muffins from pan to wire rack. Cool slightly.

    Made these using hot salsa. They were moist & well liked. Best served warm. Next time I want to add jalapenos.

    Overall, not too bad... I as well left out the salsa and added a wee bit of milk. Yet, it was missing something, a little sweetness or perhaps savoury? Next time, I'm adding in some precooked, crumbled bacon to zip it up a bit!
