Make It

  • Heat oven to 375ºF.

  • Toss chicken with seasoning mix until evenly coated.

  • Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until evenly browned. Spoon into 1.5-L casserole dish; cover with layers of beans, corn, onions and salsa.

  • Bake 20 min. Top with cheese; bake 5 min. or until melted. Serve over rice.

Great recipe. I'm a purist, I like it as is. My daughter makes this all the time at college, but when she can't afford boneless chicken she swaps for ground chkn. or beef, uses canned corn, and has even served it as a hot dip with chips!


This was an excellent recipe. It helped to read the previous reviews, I adapted it just like others, I used chickpeas instead of black beans. My partner and I loved it and I will certainly make it again.

This is so incredibly easy and delicious. I've been bored with rice lately so I served it over crisped flour tortillas -- YUMMY! I also spiced it up with a drizzle of siracha. Will absolutely make this again.


Really good! Quick to make too. You definitely spice it up if you wish with medium or hot salsa. I will make it again very soon.


This was a great recipe. It was surprisingly light and very delicious. It has a good mix of flavours. I added red pepper flakes to the taco seasoning for an extra kick. Turned out amazing. Will definately be making this again!


Loved this recipe. I used basmati rice and added it in with all the ingredients. I added more salsa that the recipe called for and also added a cup of diced tomatoes, green peppers, mushrooms. I used kidney beans as I didn't have black beans.

This dish is best made as is! So flavourful! Hubby loved it as well! I also tried it as a vegetarian rice dish (simply ommitted all steps related to the chicken) and it was also good. Best with chicken though!
