Add 1 Tbsp. fresh lime juice to dressing mixture before refrigerating.
Egg rolls can be assembled ahead of time. Do not brush with oil. Wrap individually in plastic wrap; refrigerate up to 24 hours. When ready to serve, brush with oil and bake as directed.
Warming the tortillas helps make rolling and folding easier. To warm tortillas, stack them on top of each other, wrap in foil and heat at 350ºF for 10 to 15 min. or until heated through. Or, place them on a microwaveable plate and wrap loosely in waxed paper. Microwave on HIGH 15 sec. for every 2 tortillas or until heated through.
