  • Heat oil in large skillet on medium heat. Add chorizo; cook 5 min. or until evenly browned, stirring frequently.
  • Add potatoes, onions, red peppers, chili powder and black pepper; stir. Cook 3 to 5 min. or until onions and peppers are softened, stirring occasionally. Add tomatoes and vinaigrette; stir. Cover; cook 20 min. or until potatoes are tender, stirring in the spinach for the last 5 min.
  • Use back of spoon to press 4 small indentations into top of potato mixture. Slip cracked eggs, 1 at a time, into each indentation. Cook 5 min. or until egg whites are completely set and yolks are cooked to desired doneness.


Substitute chopped ham and 1 tsp. smoked paprika for the chorizo.

Special Extra

Sprinkle with 1/4 cup Cracker Barrel Shredded Tex Mex or Double Cheddar Cheese before serving.
