This easy-to-make spice cake gets an added touch of flavour and moistness from the butterscotch pudding mix. And as a bonus, the yummy caramel drizzle makes it the perfect dessert to celebrate the fall season.

  • Heat oven to 350ºF.
  • Grease and flour 3-L fluted tube pan or 10-inch tube pan; sprinkle 2 Tbsp. pepitas onto bottom of prepared pan.
  • Beat next 6 ingredients in large bowl with mixer until blended; pour into prepared pan. Sprinkle with remaining pepitas.
  • Bake 50 min. to 1 hour or until toothpick inserted near centre comes out clean. Cool cake in pan 10 min. Loosen cake from sides of pan with knife. Invert onto wire rack; gently remove pan. Cool cake completely.
  • Microwave caramels and water in microwaveable bowl on HIGH 50 sec. or until caramels are completely melted when stirred; cool 5 min. or until slightly thickened.
  • Transfer cake to plate; drizzle with caramel sauce just before serving. Garnish with pecans.

How to Easily Drizzle the Caramel Sauce

Use teaspoon to drizzle the caramel sauce back and forth over the cake. Or, pour caramel sauce into small resealable plastic bag. Cut small piece off one bottom corner of bag; use to drizzle caramel sauce over cake.
