  • PURÉE sweet red peppers in a food processor or blender. Line a strainer or colander with cheesecloth. Strain enough juice to make 1 1/4 cups.
  • COMBINE pepper juice, pepper flakes, apple juice, vinegar, sugar, cinnamon and lemon in saucepan. Bring to a full boil.
  • IMMEDIATELY stir in liquid fruit pectin.
  • BRING to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat and skim off foam.
  • USING sterilized tongs, carefully place one of the cinnamon sticks and a strip of lemon in each warm sterilized jars.
  • POUR hot jelly quickly into warm jars filling up to 1/4 inch from rim.
  • SEAL while hot with sterilized 2-piece lids with new centres.
