Ripe concord grapes, sugar and fruit pectin are cooked briefly to produce gleaming jars of homemade grape jam. Spiced just right with cinnamon and cloves, this Spiced Concord Grape Jam is easy and delicious.

  • SLIP skins from grapes. Add 1/2 cup water to pulp; bring to a boil and simmer, covered, 5 minutes. Sieve to remove seeds. Chop skins finely and add to pulp.
  • MEASURE 5 cups prepared fruit into large saucepan. Add spices.
  • ADD sugar to fruit and mix well.
  • PLACE saucepan over high heat and bring to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat.
  • IMMEDIATELY stir in pectin. Stir and skim foam with metal spoon for 5 minutes to prevent floating fruit.
  • POUR quickly into warm, sterilized jars, filling up to 1/4 inch from rim. Seal while hot with sterilized 2-piece lids with new centres.

TIP

Substitute 1 tbsp grated orange or lemon rind for spices, if desired.
