  • Heat dressing in Dutch oven or small stockpot on medium-high heat. Add onions; cook 3 min., stirring frequently. Add carrots, potatoes and ginger; cook 3 min., stirring frequently.
  • Stir in chicken broth; bring to boil. Simmer on medium-low heat 25 min. or until carrots and sweet potatoes tender, stirring occasionally.
  • Blend soup, in batches, in blender until smooth, returning each puréed batch to pan. Stir in curry powder; cook on low heat 5 min. or until heated through, stirring frequently.

Special Extra

Garnish with green pumpkin seeds and fresh parsley before serving.

Substitute

Prepare using vegetable broth.
