  • Mix first 7 ingredients in saucepan; bring to boil. Simmer on medium-low heat 5 min. Remove from heat; cover to keep warm. Heat oil in wok on medium-high heat. Add carrots, celery and peppers; stir-fry 2 min. Remove from heat; cover to keep warm.
  • Cook noodles as directed on package; drain.
  • Place noodles in large serving bowl. Ladle broth mixture over noodles; top with vegetables and coriander.
