Asian sesame dressing does double duty here – once to flavour chicken meatballs and again to dress rice noodles. Serve the two together for a perfect pairing.

  • Heat oven to 400ºF.
  • Whisk egg and 2 Tbsp. dressing in large bowl until blended. Add chicken, yellow onions, bread crumbs, cilantro and 1/4 tsp. crushed pepper; mix just until blended.
  • Shape into 12 (2-inch) meatballs; place on foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 20 min. or until done (160ºF).
  • Meanwhile, cook noodles in large saucepan as directed on package, omitting salt and adding carrots to the boiling water for the last minute.
  • Drain noodle mixture; return to pan. Add chicken broth, green onions, remaining dressing and remaining crushed pepper; stir. Cook on medium heat 5 min. or until heated through, stirring frequently.
  • Spoon noodle mixture onto platter; top with meatballs. Drizzle with lime juice.


Substitute fresh parsley for the cilantro.

Special Extra

Garnish with lime zest and/or fresh mint leaves before serving.
