  • Heat 1 Tbsp. dressing in large skillet on medium-high heat. Add peppers and onions; cook and stir 5 min. or until crisp-tender. Add tomatoes and remaining dressing; stir. Simmer on medium-low heat 2 to 3 min. or until thickened, stirring occasionally.
  • Use spoon to make 4 small wells in vegetable mixture; fill with eggs. Cover; cook 3 to 4 min. or until whites are set and yolks are cooked to desired doneness. Top with cheese.
  • Remove from heat. Let stand, covered, 1 min.

Special Extra

Garnish with chopped fresh cilantro or additional chopped jalapeño peppers before serving.
