  • Cook bacon, stirring occasionally, in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet. Add shallots to reserved drippings; cook 3 to 5 min. or until softened, stirring frequently and adding spinach during the last 2 min. cooking time. Cook spinach until just starting to wilt, stirring constantly. Cool slightly; drain and discard excess moisture from spinach.
  • Heat oven to 350°F. Whisk eggs, cream, dressing, flour, pepper and nutmeg in large bowl until blended. Add cheese, bacon and shallot mixture; mix lightly. Spoon into 10-inch pie plate sprayed with cooking spray.
  • Bake 40 to 45 min. or until centre is set. Let stand 5 min. before slicing to serve.


Prepare using Renée's Classic Ranch 1/2 Fat Dressing and/or your favourite Cracker Barrel Shredded Cheese.
