  • Heat oven to 350ºF.
  • Heat dressing in large skillet on medium-high heat. Add onions; cook 3 to 5 min. or until softened, stirring frequently. Add spinach; cook and stir 2 to 3 min. or just until wilted. Remove from heat.
  • Whisk eggs and pepper in large bowl until blended. Add quinoa, cheese and spinach mixture; mix well. Spoon into 12 muffin pan cups sprayed with cooking spray.
  • Bake 18 to 20 min. or until lightly browned. Cool in pan 5 min. before removing from pan to serve.

Special Extra

Add 1/2 cup chopped red peppers to the quinoa mixture before spooning into prepared muffin cups and baking as directed.

Special Extra

For more flavour, cook the quinoa in chicken or vegetable broth instead of water.
