The cut vegetables and dressing can be prepared ahead of time. Refrigerate in separate bowls up to 24 hours. Toss the vegetables with the dressing and cheese just before serving.
Look for the spiralized vegetables in the fresh produce or frozen foods sections of your supermarket. Or if you have your own spiralizer, you can use it to cut 1 zucchini and 1/2 of a butternut squash into the cup measures of spiral "noodles" needed to prepare this satisfying salad.
As a bonus, this delicious salad is high in fibre and an excellent source of vitamin A.
