  • Combine vegetables and beans in large bowl.
  • Whisk oil, lemon juice, vinegar, mustard and honey until blended. Add to vegetable mixture; mix lightly.
  • Top with cheese.

Make Ahead

The cut vegetables and dressing can be prepared ahead of time. Refrigerate in separate bowls up to 24 hours. Toss the vegetables with the dressing and cheese just before serving.

Note

Look for the spiralized vegetables in the fresh produce or frozen foods sections of your supermarket. Or if you have your own spiralizer, you can use it to cut 1 zucchini and 1/2 of a butternut squash into the cup measures of spiral "noodles" needed to prepare this satisfying salad.
