  • RINSE chicken; trim off excess skin and fat. Using sharp knife or poultry shears cut chicken through backbone and remove backbone (do not remove skin). Turn chicken right-side up; flatten with palm of hand.
  • PREPARE stuffing according to directions, reducing water to 1\2 cup (125 mL). Add chopped orange, juice, cranberries and rind; do not cook.
  • EVENLY spread stuffing under skin. Thread 2 large metal skewers diagonally through chiken to keep flat while roasting.
  • ROAST at 400°F (200°C) on rack; covering loosely with foil, for 1 1\2 hours or until done.
