  • Bring strawberries, rhubarb, sugar and orange juice to boil in saucepan, stirring frequently; simmer on medium-low heat 5 min. or until rhubarb is softened, stirring occasionally. Remove from heat.
  • Mash fruit mixture with back of spoon. Spoon into bowl; cool, then refrigerate 30 min.
  • Beat pudding mix and milk in large bowl with whisk 2 min. Stir in Cool Whip.
  • Place 1 cookie in each of 8 small parfait glasses. Top evenly with layers of half each of the pudding mixture and fruit mixture. Repeat layers of pudding mixture and fruit mixture.
  • Refrigerate 1 hour.

Variation

Substitute your favorite seasonal fresh fruit for the rhubarb and/or strawberries.
