Rhubarb can be made into a sauce & serve over baked chicken breast or ribs.
Method: cook 1-1/2 cups finely chopped rhubarb in 1 cup orange juice, 1/4 cup lemon juice, 1/4 cup sugar, 1/4 tsp salt, pinch of pepper until tender. Strain out the sauce, return sauce to pan, mix in 1 tsp cornstarch. Pour over baked chicken, toss in chopped green onion
