  • Bring rhubarb and water to boil in saucepan on medium-high heat; simmer on low heat 5 to 7 min. or until rhubarb is tender and breaks down to smooth consistency, stirring occasionally. Strain through fine-mesh sieve, gently pressing rhubarb with back of spoon to extract all liquid.
  • Pour strained liquid into blender; discard pulp. Blend rhubarb liquid, strawberries and drink mix until combined. Add ice cubes and half the sparkling water; blend on high speed until thickened. Pour into 2-L glass or plastic pitcher.
  • Stir in remaining sparkling water. Serve immediately.


Substitute diet ginger ale for the sparkling water. Recipe works equally well prepared with fresh or frozen rhubarb.

Special Extra

Slice 1 lemon and add to pitcher with 1/2 cup additional chopped strawberries. Or, garnish each glass rim with a lemon slice and whole strawberry.
