Make It

  • Cook bacon in large skillet until crisp. Remove bacon from skillet, drain on paper towels. Discard drippings from skillet.

  • Add chicken to skillet; cook on medium-high heat 2 min. on each side or until browned on both sides. Pour dressing over chicken; sprinkle with basil. Cook on low heat 8 to 10 min. or until chicken is done (170ºF), turning after 5 min.

  • Transfer chicken to serving platter, reserving dressing mixture in skillet; cover chicken to keep warm. Add tomatoes to skillet; stir. Cook on medium-high heat 3 min. or until heated through, stirring occasionally. Stir in bacon; spoon over chicken. Top with cheese.

  • SHORTCUT

    For a quick shortcut use 1/4 cup Oscar Mayer Real Bacon Bits instead of the chopped bacon slices. Note: Sodium will increase.

  • SUBSTITUTE

    Substitute 1 Tbsp. chopped fresh basil for the dried basil; sprinkle over chicken just before serving.

  • SERVING SUGGESTION

    Serve with a crisp mixed green salad and whole wheat pasta to round out the meal.

I have made this a couple of times, and tried different vinaigrette dressings with it. Also I like to use chopped sun-dried tomatoes in place of the fresh ones in this recipe. And sometimes I add a few bacon bits too. Delicious. Family pleaser!

Very delicious dish! The only problem I found was the dressing dried up while cooking the chicken so we had to use additional dressing when frying the tomatoes! Otherwise, fantastic! Served this dish with mashed cauliflower.

Mouth-watering! Easy! Goes well with pasta and/or any vergetable. Pairs nicely with Cheesey Spaghetti Squash recipe :D

I made this and it turned out really well - very tasty! The chicken was not dry at all however, I found that the dressing gave it a bit of a vinegar-y taste (which didn't seem to bother anyone but me). It was served with some plain pasta and a ceaser salad - a hit for sure. I would definitely make it again.

Great recipe. I tweeked it a bit by serving it on a bed of whole wheat pasta and cooked spinach, adding a bit of asiago cheese on top and broiling. Will make again.
