  • Prick potatoes in several places with fork. Microwave on HIGH 14 min. or just until tender, turning after 7 min.
  • Meanwhile, brown meat in large skillet. Add next 3 ingredients; cook until Velveeta is completely melted and mixture is well blended, stirring frequently.
  • Split potatoes; mash insides with fork. Top with meat mixture and sour cream.

Special Extra

Spice things up by stirring 1 Tbsp. Sriracha sauce (hot chili sauce) into cooked meat mixture before spooning over hot split baked potatoes. Top with sour cream.
