  • Preheat oven to 350ºF. Beat butter and sugar in large bowl with electric mixer until light and fluffy. Add egg, almonds, salt and extract; mix well. Gradually add flour, beating until well blended after each addition.
  • Roll into 42 balls, each about 3/4 inch in diameter. Place, 2 inches apart, on baking sheets. Flatten slightly with fork.
  • Bake 12 min. or until lightly browned. Let stand on baking sheets 1 min. Transfer to wire racks; cool completely. Store in airtight container at room temperature.

These buttery cookies freeze well. Place cooled cookies in airtight container. Store in freezer up to 3 months. Thaw at room temperature before serving.
