  • Cook potatoes in water in large covered skillet on medium-high heat 15 min. or until water is cooked off and potatoes are tender, stirring occasionally. Add beans, Italian dressing and cumin; mix well. Cook 5 min. or until heated through, stirring occasionally.
  • Mix Miracle Whip and Sriracha sauce until blended.
  • Spoon potato mixture into tortillas, top with cheese, pepitas and Miracle Whip mixture.

How to Toast the Pepitas

Toast pepitas in skillet on medium-high heat 2 to 4 min. or until pepitas start to pop and are lightly browned.

How to Warm the Tortillas

Add tortillas, 1 at a time, to hot skillet; cook on medium-low heat 1 min. on each side or just until warmed.

Special Extra

Garnish each taco with fresh cilantro and a squeeze of fresh lime juice.
