  • Combine sugar and corn starch in medium bowl. Add broth, chili sauce, soya sauce and vinegar; whisk until blended.
  • Heat dressing in large nonstick skillet on medium-high heat. Add eggplant and onions; cook 5 min. or until onions are crisp-tender, stirring frequently.
  • Stir broth mixture. Add to vegetable mixture in skillet; mix well. Cook 6 to 8 min. or until sauce is slightly thickened, stirring constantly.
  • Sprinkle with mint.

Serving Suggestion

Serve over hot cooked basmati rice, along with a slice of freshly baked bread to soak up the tasty sauce.
