  • BROWN 1lb ground beef; drain. ADD 1 pkg (1 1/4 oz) taco seasoning mix and 3/4 cup water. Bring to a boil; reduce heat and simmer uncovered for 10 minutes, stirring occasionally. ADD 2 cups water to the meat mixture and bring to a boil.
  • STIR in 2 cups instant white rice. Sprinkle with 1 cup KRAFT Tex Mex Shredded Cheese; cover. Cook on low heat 5 minutes.
  • TOP with tortilla chips, shredded lettuce, chopped tomato, sour cream and salsa.

    I made this with regular rice instead of minute rice, and added a bit more water. We ate it on tortillas, and put the toppings on later. My kids, ages 7 and 6 loved it!! So did my fussy hubby!! They asked for it again, the very next night!

    I make something like this about once a week. Except i add 2 packets of taco seasoning, a can of diced tomatoes (undrained), 2 cups of water and 1 cup of instant rice...we eat them on tortillas...like tacos....soooo good...my kids even take the leftovers in their lunches as tacos or dip.
