Would definitely make this again. Only had one can of black beans so, I added extra corn and it worked equally as well. After browning the beef and onions, I cooked the soup in my crock pot for 6 hours. Worked great! My adult son had 2 helpings which is a good indicator of a dishes success 'cause he had 2 ratings - it's okay or never make this again. I didn't get the latter.
My husband and I love this soup; I don't care for black beans and substitute 3 - 14 oz cans of pinto beans. On a cold winter night this is real comfort food. I serve it with crusty buns for a perfect easy meal.
