  • Heat oven to 350°F.
  • Prepare cake batter and bake as directed on package for cupcakes. Cool 10 min. Remove cupcakes from pans to wire racks; cool completely.
  • Beat cream cheese and butter in large bowl with mixer until light and fluffy. Blend in vanilla. Gradually add sugar, mixing well after each addition.
  • Spoon 1/2 cup icing into pastry bag fitted with small round decorating tip; reserve for later use.
  • Tint remaining icing with food colour paste; spread onto cupcakes. Use reserved frosting to decorate cupcakes to resemble tennis balls as shown in photo.

Note

If you don't have a pastry bag and decorating tip, you can instead use a large resealable plastic bag to decorate the frosted cupcakes. Spoon icing into bag, then cut small piece off one bottom corner of bag. Use to pipe icing onto cupcakes as directed.

How to Store

Keep frosted cupcakes refrigerated up to 24 hours before serving.
