  • Heat oil in large skillet on medium heat. Add onions, garlic, chili powder and oregano; cook 4 min., stirring occasionally.
  • Add rice; cook and stir 1 min. Stir in tomato juice; bring to boil. Cover; simmer on medium-low heat 20 min.
  • Add beans, corn and ketchup; cook on medium heat 5 min. or until heated through, stirring frequently. Remove from heat.
  • Stir in cilantro and lime juice.

Nacho Rice and Beans

Top rice with Cracker Barrel Shredded Light Tex Mex Cheese, chopped green peppers, chopped green onions and sour cream before serving.
