Instead of stacking the tortillas, top them with the chicken mixture. Roll up and place, seam sides down, in a lightly greased baking dish. Bake at 350°F until heated through. Top with extra cheese. Serve with sour cream, chopped tomatoes and shredded lettuce.
Make it Easy
Using a pizza cutter to cut the tortilla stack into wedges makes for easy slicing.
For extra zing, add 3 to 4 dashes of hot pepper sauce to the chicken mixture before spooning onto tortillas.
This is also a great way to use that leftover cooked turkey from the holidays.
Eat this in moderation and as a special occasion treat. To make it healthier, substitute low fat cheese.
