This delicious beef tenderloin steak recipe gets its Texas twist from the delicious homemade corn relish.

  • Heat greased barbecue to medium-high heat.
  • Sprinkle steaks with pepper. Mix 1/3 cup marinade and chili powder until blended. Reserve 2 Tbsp. marinade mixture for later use; brush remaining marinade mixture onto steaks. Let stand 15 min.
  • Meanwhile, brush corn with reserved marinade mixture. Grill 10 min. or until tender and evenly grill marked, turning frequently. Remove from barbecue.
  • Add steaks to barbecue; grill 10 to 15 min. or until medium doneness (160ºF), turning after 8 min. Remove from barbecue.
  • Cut kernels off corn cobs; place in medium bowl. Add onions, cilantro, lime juice and remaining marinade; mix lightly.
  • Cut avocado into slices. Serve topped with steaks and corn mixture.


This flavourful corn relish also makes a great accompaniment for cooked burgers, sausages, chicken or pork.


For more flavour, brush steaks with reserved marinade mixture then refrigerate up to 2 hours before grilling as directed.

How to Blanch the Corn

Add corn to pan of boiling water; cook 2 to 3 min. or until bright yellow in colour. Drain. Immediately plunge corn into bowl of ice water to stop the cooking. When completely cool, drain and pat dry.
