  • Pour dressing over tofu in shallow dish; stir gently to evenly coat tofu with dressing. Refrigerate 10 min.
  • Drain tofu, reserving dressing. Heat oil in large skillet on medium-high heat. Add tofu; cook 3 to 4 min. or until golden brown on all sides, stirring occasionally. Remove from skillet.
  • Add peppers to skillet; cook and stir 2 min. Add onions; cook and stir 1 min. Add rice and pineapple; mix lightly. Cook 2 to 3 min. or until heated through, stirring frequently. Add tofu, nuts and reserved dressing; mix lightly. Cook 3 to 5 min. or until heated through, stirring occasionally.

Special Extra

Stir in 1/2 cup chopped fresh basil along with the nuts and/or 1/2 tsp. crushed red pepper along with the tofu.
