These knife-and-fork cheesy breakfast sandwiches might be a little messy, but they have everything you could ever want on a toasted bun – saucy, tender pulled pork, crispy bacon, melted cheese slices and perfectly fried eggs. Using a lean pork tenderloin to make the pulled pork allows you to cook it in much less time (and with less fat) than a traditional pork shoulder. You can also make the pulled pork ahead of time to minimize the work at breakfast or brunch time. Just reheat, then use to prepare the delicious sandwiches.

  • Heat oven to 325°F.
  • Place tenderloin slices in single layer in 8-inch square baking dish sprayed with cooking spray. Pour broth over meat; cover.
  • Bake 1-3/4 hours or until meat is done (160°F), turning after 1 hour. Remove meat from oven. Shred tenderloin with 2 forks; return to baking dish. Add barbecue sauce; mix lightly. Bake, uncovered, 15 min. or until heated through.
  • Meanwhile, spray large plate with cooking spray. Melt half the margarine in large nonstick skillet on medium-low heat. Slip 3 of the cracked eggs, 1 at a time, into skillet, leaving spaces between eggs; cook 5 min. or until egg whites are set and yolks are cooked to desired doneness. Transfer cooked eggs to prepared plate; set aside. Cover to keep warm. Repeat with remaining margarine and eggs.
  • Fill buns with pulled pork, process cheese product slices, bacon and eggs just before serving.

Make Ahead

The pulled pork mixture can be prepared ahead of time. Cool, then refrigerate up to 2 days. Reheat before using to prepare sandwiches as directed.

Special Extra

Season with hot pepper sauce to taste.
