Arbol chiles are hot slender chiles about 3 inches long and red in colour. If you can't find arbol chiles, you can use 1-1/2 tsp. crushed red pepper instead.
Use an apple corer to scoop out the centres of the cooked zucchini to make the shells.
For even cooking, use zucchini that are similar in shape and size.
The addition of the cooking water to the sauce adds extra flavour. Be sure to rinse the zucchini before adding them to the boiling water.
