Truth be told, omelettes taste great any time of day. Here, we've roasted tomatoes and crisp fresh asparagus for an extra flavourful filling. Melted cheese pulls it all together. Serve with multi-grain toast and fresh fruit.

  • Heat oven to 425ºF.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Place tomatoes in medium bowl. Add vinegar, olive oil and garlic; mix lightly. Use slotted spoon to transfer tomatoes to one side of prepared baking sheet, reserving vinegar mixture in bowl.
  • Bake 10 min. Meanwhile, add asparagus to reserved vinegar mixture; mix lightly.
  • Spread asparagus onto empty half of baking sheet. Bake (with tomatoes) 10 min.
  • Remove asparagus from baking sheet; reserve for later use. Spoon tomatoes and any pan juices into medium bowl. Add ketchup and basil; mix lightly.
  • Melt half the butter with half the vegetable oil in medium nonstick skillet on medium heat. Whisk eggs, milk and pepper until blended; pour half into skillet. Cook and stir 30 sec., then cook (without stirring) additional 30 sec.; cover. Cook on low heat 2 to 3 min. or until omelette is almost set in centre.
  • Reserve half the tomato mixture for later use. Top half the omelette with half each of the remaining tomato mixture, asparagus and cheese; fold in half. Turn off heat; cover skillet. Let omelette stand 1 min. Transfer to plate; cover to keep warm. Repeat with remaining ingredients to make second omelette. Serve omelettes topped with reserved tomato mixture.


Substitute chopped fresh dill for the basil.


Prepare using your favourite variety of Cracker Barrel Shredded Cheese.
