  • Bring quinoa and tomato juice to boil in medium saucepan; cover. Simmer on medium-low heat 20 min. or until quinoa is tender and tomato juice is completely absorbed. Spoon into medium bowl; cool completely.
  • Add remaining ingredients; mix lightly.
