  • Heat oven to 400ºF.
  • Toss bread with oil in large bowl; spread onto parchment-covered rimmed baking sheet.
  • Bake 10 min. Sprinkle with cheese; stir. Bake 8 to 10 min. or until bread is crisp and golden brown. Cool 10 min.
  • Place toasted bread cubes in large bowl. Add remaining ingredients; mix lightly.


This salad is equally delicious when prepared without toasting the bread. Just prepare salad as directed, omitting the oil and tossing the fresh bread cubes with remaining ingredients just before serving.


Substitute chopped fresh parsley for the basil.
