  • Heat oven to 400ºF
  • Bring first 4 ingredients and 1 cup water just to a boil in a large nonstick skillet, stirring frequently; cover. Remove from heat; let stand 5 min. Stir in 1/2 cup cheese.
  • Cut peppers lengthwise in half; remove and discard seeds. Spoon simulated beef mixture into pepper halves; place in 13x9-inch baking dish. Pour remaining water around peppers; cover.
  • Bake 30 min. Sprinkle remaining cheese; bake, uncovered, 10 min. or until melted.

Best of Season

Recipe can be prepared using whatever colour pepper is most readily available.

Make Ahead

This delicious pepper filling can be prepared ahead of time. Cool, then refrigerate up to 24 hours. When ready to serve, spoon filling into peppers, then bake as directed.
