Prepare using 2 butternut squash. Be sure to look for small squash which weigh about 1 lb./450 g each.
Stir 1 tsp. chopped fresh thyme or sage leaves into the turkey mixture before spooning into squash halves. And/or sprinkle tops of baked squash halves with chopped fresh parsley or chives before serving.
Instead of microwaving the squash halves, you can bake them in the oven. Place uncooked squash halves, cut sides down, in 13x9-inch baking dish. Bake in 375ºF oven 40 min. or until squash is tender. Remove baking dish from oven. Increase oven temperature to 425ºF. Turn squash halves over; fill with turkey mixture, then top with cheese and prepared stuffing and bake as directed.
