Baked acorn squash is a tender, sweet and delicious fall and winter side dish. But did you know you can turn it into an edible bowl for the ultimate post holiday main? The best part? This recipe only requires 5 ingredients (plus a little water). Leftover roasted turkey, prepared stuffing, gravy and cheese get spooned into tender acorn squash halves for a delicious Thanksgiving meal that's served in a tasty and nutritious bowl!

  • Heat oven to 425ºF.
  • Place squash halves, cut sides down, on microwaveable plate. Microwave on HIGH 12 to 15 min. or until tender.
  • Meanwhile, add boiling water to stuffing mix; stir just until moistened.
  • Place squash, cut sides up, in 13x9-inch baking dish. Combine turkey and gravy; spoon into squash halves. Top with cheese and stuffing.
  • Bake 20 min. or until stuffing is crisp, and squash and filling are heated through.

Substitute

Prepare using 2 butternut squash. Be sure to look for small squash which weigh about 1 lb./450 g each.

Special Extra

Stir 1 tsp. chopped fresh thyme or sage leaves into the turkey mixture before spooning into squash halves. And/or sprinkle tops of baked squash halves with chopped fresh parsley or chives before serving.

Variation

Instead of microwaving the squash halves, you can bake them in the oven. Place uncooked squash halves, cut sides down, in 13x9-inch baking dish. Bake in 375ºF oven 40 min. or until squash is tender. Remove baking dish from oven. Increase oven temperature to 425ºF. Turn squash halves over; fill with turkey mixture, then top with cheese and prepared stuffing and bake as directed.
