This little turkey meatloaf for two is big on flavour and texture, with tangy BBQ sauce and chunks of red potato and sweet onion.

  • Heat oven to 375ºF.
  • Cut onion into wedges. Chop enough of the wedges to measure 1/4 cup; set aside. Combine remaining onion wedges, potatoes and carrots in large bowl. Add oil; toss to evenly coat. Spread onto bottom of 15x10x3/4-inch pan. Bake 15 min.
  • Mix turkey, chopped onions, cracker crumbs and egg white in same bowl. Remove vegetables from oven; stir, then spoon to edges of pan. Shape turkey mixture into 6x3-inch oval loaf; place in centre of pan. Brush with barbecue sauce.
  • Bake 15 to 20 min. or until meatloaf is done (165ºF) and vegetables are tender. Sprinkle cheese over vegetables.


Prepare using your favorite flavour of Bull's-Eye Barbecue Sauce.
