  • Place pepper halves, cut sides up, in 13x9-inch baking dish sprayed with cooking spray; cover.
  • Bake 20 min. Meanwhile, combine half the parsley with all remaining ingredients except cheese.
  • Spoon chicken mixture into pepper halves.
  • Bake, uncovered, 8 to 10 min. or until chicken filling is heated through.
  • Sprinkle with cheese and remaining parsley.

Variation

Instead of using the 3 different colours of peppers, you can prepare this recipe using whatever colour peppers you have on hand.
