  • Heat oven to 350ºF.
  • Mix graham crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese and 3/4 cup sugar in large bowl with mixer until blended. Scrape inside of vanilla bean into batter; discard pod. Add flour and 1/4 tsp. nutmeg to cream cheese mixture; mix well. Blend in rum. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 40 min. or until centre is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.
  • Beat cream and remaining sugar in small bowl with mixer on high speed until stiff peaks form. Use to garnish cheesecake. Sprinkle with remaining nutmeg.


To prepare cheesecake without the rum, prepare recipe as directed omitting the flour and rum.

Special Extra

We’ve garnished with spun sugar, but you could try whipped cream and a sprinkle of nutmeg, chocolate curls or a little cinnamon and shaved white chocolate.

    I agree with the lady's comments before. Delicious but how do you make the topping - it looks like an egg's nest - real neat. Give us the recipe for it

    Not fair!! You didn't include the spun sugar topping to make ours look just as fabulous. I will be making this cake for our Christmas party next month. Can't think of a more beautiful and appropriate cheesecake to make. Kraft cheesecakes are always wonderful. I will report back in a month with the results of making it.
