  • Heat oven to 400°F.
  • Combine barbecue sauce and 1 Tbsp. fajita seasoning. Cut mushrooms into 1-inch-wide strips; place, cut sides up, on half of rimmed baking sheet sprayed with cooking spray. Brush with barbecue sauce mixture.
  • Place peppers and onions in medium bowl. Mix dressing and remaining fajita seasoning until blended. Add to vegetables; toss to evenly coat vegetables with dressing mixture. Spoon onto other side of baking sheet.
  • Bake 15 min. Meanwhile, stack tortillas; wrap in foil.
  • Add tortillas to oven. Bake 10 min. or until tortillas are heated through and vegetables are crisp-tender.

Easy Cleanup

Covering the baking sheet with foil makes for easy cleanup.


Substitute a poblano chile for 1 of the peppers.
