  • Heat oil in large saucepan on medium heat. Add all remaining ingredients except tomato juice, broth and watercress; stir. Cook 5 min., stirring occasionally.
  • Stir in tomato juice and broth. Bring to boil; simmer on medium-low heat 40 min. or until potatoes are tender, stirring occasionally.
  • Remove and discard bay leaves. Serve soup topped with watercress.

Serving Suggestion

Serve with crusty whole wheat bread, and a mixed green salad tossed with your favourite Kraft Dressing.
