Make It

  • Cook potatoes in boiling water in large saucepan 15 to 20 min. or until tender; drain. Cool 10 min. Mash until smooth. Add onions, egg and pepper; mix just until blended.

  • Heat oven to 400ºF. Roll potato mixture into 24 balls, using 2 Tbsp. for each. Insert 1 Velveeta cube into centre of each ball, completely enclosing Velveeta with potato mixture.

  • Place coating mix in pie plate. Add potato balls, 1 at a time; roll to evenly coat. Place on rimmed baking sheet sprayed with cooking spray.

  • Bake 14 to 16 min. or until heated through. Serve with salsa.

    Substitute 2 Tbsp. chopped fresh chives for the green onions.

This was a good recipe, the cheese did leak out on a couple of them. However they were pretty tasty and everyone did enjoy them. I made mine a little smaller than in the picture more of a one bite than a two bite

I had a bit of trouble with the recipe and I think that maybe I made the potato balls too large. They seemed too heavy as an appetizer. If I make it again, I'd make the balls as small as possible.

We really enjoyed these! I only had mozzarella cheese and no green onion, so I added sour cream, garlic, onion, and chilli powder for a little kick. There was lots of flavor. Will be making again.

I liked the ease of this recipe but found the potatoes a little bland. Next time I would add some garlic and maybe a little Parmesan cheese to the potatoes.

I don't cook much, but I think these are the best things I've ever made. I made potato skins the day before so I used the leftover potato I scooped out to make them. Although easy to make, it's a bit time consuming and took me about 20 - 30 minutes just to roll them into balls.
