  • Heat oven to 350°F.
  • Brown meat with peppers and onions in large skillet; drain. Return to skillet.
  • Stir in seasoning mix and water. Add potatoes, corn and Velveeta; mix well. Spoon into 13x9-inch baking dish; cover.
  • Bake 35 min. or until heated through, uncovering after 20 min.

Use Your Stove

Brown meat with peppers and onions in large skillet; drain and return to skillet. Stir in seasoning mix, water, potatoes and corn; cover. Cook 5 to 7 min. or until potatoes are tender. Stir in Velveeta; cook, uncovered, until Velveeta is melted and mixture is well blended, stirring occasionally.

    We liked this but did not use all the taco mix because we both have problems with spices. It makes a good meal with a side salad.

    I added Kraft Mozza-Cheddar cheese to the top before baking and added Tex-mex seasoning because the other review said it was bland. Overall is a good, basic recipe.

    Very tasty! I printed this recipe some time ago and the version that I have is made entirely on top of the stove. It called for only 10 oz of corn and this equates to about 1 1/4 c., but I used 1 1/2. I will DEFINITELY make this again!
