  • Dipping Sauce:

  • Dissolve sugar in warm water in small bowl. Whisk in peanut butter until well blended. Add soy sauce and hot pepper sauce; mix well.
  • Lettuce Rolls:

  • Top lettuce leaves with pasta, shrimp, mint and vegetables. Fold in both sides of each leaf, then carefully roll up.
  • Serve with Dipping Sauce.

For a more authentic flair, use rice paper instead of lettuce leaves. Include cilantro leaves, mango strips and pork shreds as choices for the filling. Also, serve with hoisin sauce in addition to, or instead of, the homemade Dipping Sauce. Look for these ingredients at your local Asian grocery store.

Excellent! We do "Asian Night" at least once a month and are always lookng for a new addition. From toddler to teenager the whole family found this a fun and tasty addition. I added some orange juice and zest and a little ginger to the dipping sace to sweeten it up for the kids.
