Make It

  • Preheat oven to 350ºF. Mix cookie crumbs and margarine; press onto bottom of 9-inch square baking pan. Melt 2 oz. chocolate as directed on package.

  • Beat cream cheese, sugar and vanilla with mixer until blended. Add melted chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

  • Bake 25 to 28 min. or until centre is almost set. Cool 5 min.; spread with jam. Melt remaining chocolate square; drizzle over cheesecake. Cool cheesecake completely. Refrigerate at least 4 hours. Cut into 24 bars.

I made this recipe for our family christmas dinner and I've never had such a wonderful response for anything I've ever made before. Some of my family were "yumming" all evening I even had my future brother in-law smacking the table he thought it was so good. I feel that this is such a simple recipe that turns out so delicious!


excellent recipe, and easy to make, I cut back on the sugar but otherwise a big hit.


This is an excellent recipe and a very big hit. The only suggestions I have is use a little more jam and use a couple more oreo cookies, since 15 didn't fill the bottom of my pan. But overall it is an excellent recipe!


I made this for a recent potluck. The bars tasted really good. But I was disappointed the way the jam melted and got absorbed by the cheesecake and spilled onto the plate as time passed. The bars definitely didn't look as appetizing with jam spread everywhere! For home dining, it doesn't matter; but for future potlucks, I'll probably choose a different cheesecake bar recipe.

Excellent & easy to do. I used an Oreo crumb crust instead of cookies & added a little more raspberry jam. I baked it in a round pan lined with parchment paper so I could serve it on a cake plate in wedges. I think this would also be great with dark chocolate.
